The process of making a Tsunami cake
A Tsunami cake is made in the same way as any other cake, with layers of cake sandwiching a delectable buttercream icing. The twist, though, is in the presentation. Instead of being covered in a smooth icing layer on all sides, the icing is made slightly liquid to allow it to flow. To achieve the desired icing consistency, combine cornstarch and milk.

HOW TO MAKE A MALAI CAKE
1.Fill a large mixing basin halfway with fresh curd.
2. Add the sugar powder, then the neutral-flavored oil. Combine all of the ingredients thoroughly.
3. Place a sieve over the bowl and pour in the maida, baking powder, and baking soda. Mix everything together after a thorough sieving.
4. Finally, add some milk and stir everything together until you have a ribbon-like batter.
5. Grease a heavy-bottomed pan with cooking oil. Butter the pan and place butter paper on it (optional). Butter the parchment paper.
6. Pour the batter into the prepared pan. When you’re finished, give the pan a gentle tap.
7. Preheat a roti tawa on top of the pan.
8. Place the cake batter pan on the roti tawa and cover with the lid. Bake the cake for 12-15 minutes on a low burner.
9.Now it’s time to make the rabri. Fill a pan halfway with water, then halfway with milk (room temperature). Bring to a boil, then reduce the milk to 60%.
10. Pour in the sugar. Scrape the sides and combine with the milk. Add some saffron now (optional).
11. Toss in a pinch of cardamom powder for extra flavour. Continue to combine. Turn the heat off. Allow time for it to cool.
12. Return to your cake now. Prick it with a toothpick to see if the inside is totally cooked. Allow to cool before removing the mould.
13. Using a fork, prick the cake several times. On top of the cake, spread the rabri. Garnish with pistachios and sliced almonds.
